Description
Salima & Alain Cordeuil Champagne Origines Brut Nature is a characterful grower Champagne that showcases the purest expression of its terroir, unmasked by dosage. Crafted from Chardonnay and Pinot Noir, this cuvée is all about precision, energy and mineral clarity. Bottled as Brut Nature, it offers a dry, incisive style that will appeal to Champagne lovers seeking authenticity and tension over sweetness. The blend of white and red grapes gives Origines both finesse and depth, with Chardonnay bringing brightness and Pinot Noir adding structure and subtle red-fruited nuance. As a grower-producer working on a small scale in Champagne, Salima and Alain Cordeuil emphasize careful vineyard work and low-intervention cellar practices, continuing the region’s long-standing tradition of artisanal, estate-bottled Champagne.
Tasting Notes
In the glass, Champagne Origines Brut Nature typically shows a pale lemon to light gold hue with a fine, persistent bead and an elegant mousse. The bubbles are delicate yet energetic, lending the wine a crystalline, lifted appearance that hints at its brisk, dry profile.
On the nose, expect citrus zest, green apple and pear, layered with chalky minerality and hints of white flowers. With air, subtle notes of toasted bread, fresh almond, and light brioche emerge, reflecting time spent on the lees rather than sweetness from dosage. The palate is taut and linear, with bright acidity and a bone-dry attack. Chardonnay provides razor-sharp citrus, salinity and lift, while Pinot Noir contributes texture, subtle red apple and a touch of spice. The finish is long, stony and mouthwatering, leaving a clean, saline impression that invites another sip. Enjoy it now for its vibrancy, or over the next few years to allow the aromas to gain complexity and a touch more creaminess.
Production
Origines Brut Nature is crafted in Champagne from Chardonnay and Pinot Noir grown on carefully tended vineyards, where the cool climate and chalk- and limestone-influenced soils contribute to the wine’s natural tension and minerality. The grapes are harvested by hand to ensure optimal selection and gentle handling, preserving acidity and aromatic purity. In the cellar, the must is fermented in temperature-controlled conditions, and the base wines rest on their lees before blending. Secondary fermentation takes place in bottle, following the traditional méthode champenoise, and the wine ages sur lie to develop texture, fine bubbles and subtle autolytic complexity. True to its Brut Nature designation, no dosage is added at disgorgement, allowing the terroir and grape character to stand clearly at the forefront.
Food & Serving
This Brut Nature Champagne is a superb match for clean, precise flavors and dishes that benefit from high acidity and minerality. Think oysters, caviar, sashimi, ceviche, and simply grilled fish, as well as fresh goat cheese, sushi, tempura or delicately seasoned shellfish. It also works beautifully as an aperitif for those who prefer a crisp, dry style. Serve well-chilled, around 8–10°C (46–50°F), to highlight its tension and freshness. A brief 10–15 minutes in the glass or in an open bottle is enough for it to unfold aromatically; decanting is generally not necessary, though pouring into a slightly larger white wine glass rather than a narrow flute can help express its full aromatic range.
