Saint-Georges Thongue Cabernet Sauvignon 2023 from Domaine Saint-Georges d'Ibry is a characterful Languedoc red that showcases Cabernet in a distinctly Mediterranean expression. Combining ripe southern fruit with the grape’s classic leafy spice, it offers both immediate pleasure and the structure to mature gracefully over a few years. Tasting Notes
In the glass, this Cabernet Sauvignon shows a deep, vibrant ruby-red colour with a youthful, almost velvety intensity at the core. The nose is immediately expressive and varietally true, marked by aromas of green pepper and fresh capsicum, layered with dark berries, hints of garrigue herbs (thyme, rosemary, wild scrub) and a touch of spice.
On the palate, the wine is medium to full-bodied with a generous, fleshy fruit core. Subtle paprika notes and dried herbs mingle with blackcurrant, blackberry and a faint savoury edge, giving depth and complexity. The tannins are firm yet ripe, providing structure without harshness, while fresh acidity keeps everything precise and food-friendly. The overall volume and power, combined with the underlying juiciness and concentration of fruit, suggest very good aging potential for an IGP wine: enjoy now for its vibrant, peppery character or cellar for 3–6 years to allow the flavours and tannins to further harmonise.
Production
Domaine Saint-Georges d’Ibry is set on roughly 40 hectares in the heart of the IGP Côtes de Thongue, benefitting from a sunny Mediterranean climate and a patchwork of varied soils. The deeper soils on the estate are particularly well-suited to Cabernet Sauvignon, allowing the grapes to reach full maturity while retaining freshness and aromatic precision. The family practices sustainable, environmentally respectful viticulture (culture raisonnée), limiting yields so that the vines focus their energy on fewer, more concentrated grapes. Harvesting is timed to capture both ripeness and balance, and the fruit is carefully sorted before vinification. Fermentation is carried out in temperature-controlled tanks to preserve the purity of fruit and the grape’s distinctive green pepper and garrigue notes, followed by a period of maturation that softens the tannins and builds structure without masking the wine’s natural character.
Food & Serving
This Cabernet Sauvignon is a versatile table partner, particularly well-suited to grilled or roasted meats such as lamb chops with herbs, beef entrecôte, spicy sausages, or duck with Mediterranean spices. It also pairs nicely with hearty stews, pizza with cured meats, roasted vegetables, and aged semi-hard cheeses like Comté or Tomme. Serve at 16–18°C to bring out the aromatic complexity without emphasizing the tannins. A brief decant of 30–45 minutes is recommended in its youth to open up the pepper, spice and garrigue nuances; as it gains a few years of bottle age, a gentle splash in a carafe just before serving will be sufficient.
