The combination of strong diurnal temperature shifts and mineral-rich terrain yields grapes with concentrated aromas, firm acidity, and a pronounced sense of place. Harvesting is typically done by hand to ensure only the healthiest bunches are selected, preserving freshness and balance. In the cellar, the focus is on a gentle, low-intervention approach: careful pressing, temperature-controlled fermentation, and maturation designed to highlight the grape’s natural purity and the terroir’s signature minerality, rather than mask it with heavy oak.
Food & Serving
This wine’s bright acidity and elegant profile make it an excellent partner for delicate seafood such as grilled prawns, seared scallops, trout, or lightly smoked salmon.
