Production
Les Byots is a Premier Cru vineyard in Mercurey, in the heart of the Côte Chalonnaise, where Pinot Noir thrives on limestone-rich clay soils and well-exposed mid-slope parcels. These soils, coupled with an east to south-east exposure, bring both ripeness and freshness, resulting in wines of energy and definition. Grapes are typically harvested by hand at optimal ripeness to preserve the delicacy of Pinot Noir’s thin skins and aromatic profile. In the cellar, gentle vinification with careful destemming, temperature-controlled fermentation, and moderate extraction allows for fine tannin structure and purity of fruit, while maturation—often in French oak barrels, with a restrained proportion of new oak—adds subtle spice and texture without overwhelming the terroir-driven character.

This Mercurey Premier Cru is a versatile food wine that pairs beautifully with roast chicken, guinea fowl, duck breast, veal, or pork tenderloin, as well as game birds and dishes featuring mushrooms, truffles, or root vegetables. Producer
The roots of this cuvée lie in the historic Goichot family, whose story began in 1947 when André Goichot founded his négociant house and, in 1976, invested in Château de la Guiche and the Les Dressolles parcel in Meursault—key steps that shaped the family’s Burgundian legacy. Today based in Beaune, the Goichot enterprise is recognized as one of the last independent, family-owned négociants in Burgundy, working closely with dedicated growers and estates across the region. In 2015, the family took on exclusive distribution of Domaine des Guignottes in Saint-Valerin near Buxy, and in 2016 assumed control of the historic Château du Cray estate, whose 22 hectares of vineyards wrap around the château on prime, east to south-east facing slopes. This long-standing presence in the Côte Chalonnaise underpins the quality and regional authenticity of wines such as this Mercurey 1er Cru Les Byots.
