Tasting Notes
In the glass, it typically shows a deep mahogany to almost ebony color with a glossy, syrupy appearance. On the palate it is lush and full-bodied, with a dense sweetness balanced by notes of baked fruit, toasted nuts, and dark toffee, finishing long and warming. While ready to enjoy now, its concentrated style gives it excellent keeping potential once opened if stored properly.

Production
Made in Andalusia, this wine comes from the hot, dry south of Spain, where the Pedro Ximénez grape can achieve very high natural sugar levels before harvesting. The grapes are traditionally sun-dried to further concentrate their sugars and flavors, after which the must is typically fermented lightly and fortified to preserve the wine’s richness. Aging in the classic sherry system adds oxidative complexity and depth, enhancing the wine’s signature dark, sweet profile.

Romate Sherry Pedro Ximenez is a classic match for blue cheese, almond-based desserts, chocolate fondants, vanilla ice cream, and dried fruit tarts. It is also excellent poured over ice cream or enjoyed on its own as a digestif. Serve slightly chilled, around 10–12°C, and decanting is not necessary.
