Roger Sabon’s Châteauneuf-du-Pape Cuvée Le Secret des Sabon 2005 is one of the estate’s most sought-after wines, produced in tiny quantities from very old vines in one of the appellation’s finest sites. Built largely on Grenache and shaped by the power and finesse of the southern Rhône, it is a collector’s wine with real historical pedigree and long-haul appeal.

Tasting Notes
In the glass, it shows deep, dark color with impressive concentration. The nose is layered and expressive, combining black raspberry, cassis, blackberry, garrigue, Provençal herbs, licorice, and a distinctive savory note that recalls beef blood and earth. On the palate, the wine is full-bodied, dense, and richly textured, yet balanced by elegance and lift. The 2005 vintage has delivered remarkable depth and structure, with a powerful, masculine profile and a long, persistent finish. It is drinking beautifully now, but has the backbone to age for decades and continue developing complexity over time.

Production
This cuvée comes from very old vines, some over 100 years of age, with fruit drawn largely from the prized La Crau sector of Châteauneuf-du-Pape. The wine is made as a traditional field blend, although Grenache is the dominant grape, reflecting historic planting practices in the region. It is aged for around 18 months in demi-muids, allowing the wine to gain polish and integration while preserving its intensity and sense of place.

Food & Serving
Best served with richly flavored dishes such as slow-roasted lamb, beef short ribs, game, duck, or herb-crusted Mediterranean meats. It also pairs beautifully with mature hard cheeses and dishes featuring rosemary, thyme, or Provençal seasoning.
