Tasting Notes
In the glass, the 2018 Pajé Vecchie Viti shows a luminous garnet core with orange-tinged reflections at the rim, a hallmark of traditionally crafted Nebbiolo. The nose is intensely perfumed yet precise, offering layers of rose petals, dried violets, sour cherry, wild strawberry, and blood orange, intertwined with notes of licorice, anise, tobacco leaf, and subtle hints of truffle and underbrush.
On the palate, this Barbaresco is taut and vertical, with a fine but firmly gripping tannic backbone that frames its lively, mouthwatering acidity. Flavors echo the nose: red cherry and pomegranate, with savory undertones of leather, spice, and crushed herbs, plus a delicate mineral edge that speaks clearly of Pajé’s limestone-rich soils. The finish is long and persistent, gradually unfurling with notes of citrus zest and dried flowers. Production
The Pajé vineyard sits in the village of Barbaresco, on a steep amphitheater of calcareous marl with a high limestone content, which gives Nebbiolo its signature tension and minerality. The ‘Vecchie Viti’ cuvée comes from some of the oldest vines in this parcel, deeply rooted and naturally low-yielding, concentrating flavor and structure in the grapes. Roagna works with meticulous, manual vineyard care and sustainable, low-intervention farming, harvesting by hand at optimal ripeness. In the cellar, the fruit is vinified traditionally: long macerations with submerged cap, the use of indigenous yeasts, and patient aging in large, neutral oak botti to gently refine tannins while preserving aromatics. The wine is released only after extended maturation and additional time in bottle, ensuring it captures both the power of old vines and the elegance of classic Barbaresco.

Roagna Barbaresco Pajé Vecchie Viti 2018 pairs beautifully with refined yet flavorful dishes such as braised veal shank, roasted lamb, game birds, and classic Piedmontese specialties like brasato al Barolo, tajarin with white truffle, and mushroom risotto. It also complements aged cheeses like Parmigiano Reggiano or a well-matured Pecorino. Serve at 16–18°C (about 60–64°F) in large Burgundy or Nebbiolo stems to allow full aromatic expression. Decanting is strongly recommended, especially in its youth: give it 1–3 hours in a decanter to soften the tannins and fully open the bouquet.
