Tasting Notes
In the glass, this Champagne shows a luminous pale gold color with subtle copper highlights and a fine, persistent bead of bubbles. The nose opens with ripe orchard fruits—think baked apple and yellow plum—layered with wild strawberry, citrus zest, and hints of white flowers, brioche, and chalky minerality.
On the palate, the wine is structured and full of energy, with the natural intensity of Pinot Noir driving the flavor. Production
Rémi Leroy works primarily in the Côte des Bar in southern Champagne, where the Kimmeridgian limestone and clay soils give Pinot Noir both body and tension. The vineyards are farmed with great attention to balance and biodiversity, favoring careful canopy management and moderate yields to preserve concentration and freshness. Grapes are harvested by hand at optimal ripeness and sorted in the vineyard to ensure only healthy, perfectly mature fruit is used. In the cellar, Leroy’s approach is deliberately minimalist: gentle pressing, controlled fermentations (often with a combination of stainless steel and neutral vessels), and extended aging on the lees to build texture and complexity without masking the purity of the fruit. The resulting Blanc de Noirs is a precise expression of Pinot Noir and terroir, rather than heavy cellar work.

This Champagne pairs beautifully with refined yet flavorful dishes: think tuna tartare, salmon sashimi, roasted guinea fowl, poultry in cream sauce, or a simple roast chicken with herbs.
