Tasting Notes
The wine is inky and deeply colored, opening with an intense aromatic profile of blackcurrant, blackberry, dark cherry, black truffle, violets, pencil shavings, dark chocolate, and sweet pipe tobacco. On the palate, it is concentrated and layered, yet remarkably smooth and polished, with the fruit and savory notes unfolding in a silky, seamless texture. Even in its youth, the finish is already strikingly complete and well-defined, but this is a wine with serious aging potential. It will continue to gain complexity and depth over many years, rewarding patience with greater nuance and elegance.

Production
The grapes come from two of the most respected sites in Washington’s Horse Heaven Hills AVA, where warm, dry conditions are ideal for ripening Cabernet Sauvignon fully and consistently. Harvesting is carried out by hand, with careful sorting to preserve only the best fruit, and the wine is matured for 20 months in 100% new French oak to build structure, spice, and polish.

Food & Serving
This is a wine best served with richly flavored dishes such as prime rib, grilled ribeye, braised short ribs, venison, or lamb with rosemary. Serve at around 16-18°C and consider decanting for 1-2 hours if enjoying it young, to allow the wine’s aromatics and structure to open fully.
