Quilceda Creek Cabernet Sauvignon 2006

Quilceda Creek Cabernet Sauvignon 2006 is a benchmark Washington Cabernet from one of the state’s most celebrated producers. Crafted entirely from Cabernet Sauvignon and sourced primarily from the legendary Champoux Vineyard in the Horse Heaven Hills AVA, it combines power, precision, and remarkable harmony in a style that has helped define premium Washington red wine.

Tasting Notes
In the glass, the wine shows a deep, nearly inky color that signals its concentration and depth. The bouquet is intense and layered, with blackcurrant, blackberry, and dark cherry lifted by notes of black truffle, violet, pencil lead, dark chocolate, and sweet pipe tobacco. On the palate it is full-bodied, polished, and profoundly expressive, with rich dark fruit framed by refined oak spice and a silky, seamless texture. The finish is long, elegant, and persistent. While already beautifully balanced, this vintage has the structure and concentration to age gracefully for many years, gaining additional complexity over time.

Production
The fruit comes from two of the most respected sites in the Horse Heaven Hills AVA: about 90% from Champoux Vineyard and 10% from Mach One Vineyards. These vineyards benefit from a warm, dry climate and well-suited soils that are ideal for Cabernet Sauvignon, allowing the grapes to reach full ripeness while retaining freshness and structure. Harvest is done entirely by hand, with only the best fruit selected for the cellar. After a gentle fermentation, the wine is matured for 20 months in 100% new French oak barrels, a regimen that adds depth, complexity, and a refined spicy edge without overpowering the fruit.

Food & Serving
This is a wine best served with robust dishes such as grilled ribeye, lamb chops, slow-braised short ribs, venison, or truffle-infused mushroom dishes. It is also excellent with aged hard cheeses. Serve at around 16–18°C, and decant for at least 1–2 hours if drinking young to allow the wine to fully open.
