Quilceda Creek Cabernet Sauvignon 2004 is a benchmark Washington Cabernet, crafted with remarkable precision by Paul Golitzin. Made entirely from Cabernet Sauvignon sourced from the famed Champoux Vineyard and Mach One Vineyards in Horse Heaven Hills, it combines power, elegance, and unmistakable pedigree.
Tasting Notes
Deep, nearly inky black in the glass, this wine immediately signals concentration and depth. The nose is layered with blackcurrant, blackberry, and dark cherry, lifted by notes of black truffle, violet, pencil shavings, dark chocolate, and sweet pipe tobacco.
On the palate, it is full-bodied, plush, and intensely complex, with ripe dark fruit wrapped around polished tannins and a finely tuned structure. The finish is exceptionally long and refined, and while already beautifully balanced, the wine has the concentration and backbone to age gracefully for well over a decade.
Production
This Cabernet Sauvignon is sourced primarily from Champoux Vineyard, with the remainder from Mach One Vineyards, both located in the Horse Heaven Hills AVA of Washington State. The region’s warm climate, excellent drainage, and ideal growing conditions for Cabernet Sauvignon contribute to the wine’s depth and intensity. Harvested entirely by hand, the fruit is carefully selected before fermentation, then aged for 20 months in 100% new French oak to add structure, spice, and complexity.
Food & Serving
This is a wine for rich, savory dishes such as prime rib, grilled ribeye, lamb chops, braised short ribs, or truffle-infused dishes. Serve at around 16–18°C, and consider decanting for 1–2 hours if drinking now to allow the wine to open fully.
