Pradio, Sobaja Sauvignon 2024 White

Pradio Sobaja Sauvignon 2024 is a fresh, expressive white wine from Friuli in northeastern Italy, where the vineyards benefit from the protection of the Carnic Alps and the moderating influence of the Adriatic Sea. Its precise, low-oxidation production preserves the grape’s vivid aromatic character, while extended lees ageing adds texture and depth to the wine’s bright, mineral style.

Tasting Notes
The wine shows a delicate straw-yellow colour with attractive pale-green highlights. Its intense, clean nose opens with distinctive notes of tomato leaf and fresh herbs, gradually revealing sweeter impressions of ripe fruit. On the palate, Sobaja Sauvignon is fresh and lightly citrus-driven, with mineral nuances and a balanced, refreshing finish. It is best enjoyed young to appreciate its vibrant aromatics and crisp character, though its time on the lees provides additional substance for short-term development in bottle.

Production
The grapes are grown in Friuli, a distinctive wine-growing area shaped by the shelter of the Carnic Alps and the nearby Adriatic Sea. Harvesting takes place at night, and the grapes are carefully protected from oxidation through precise temperature control from picking until fermentation begins. Fermentation is carried out at a controlled temperature, followed by extended ageing on the lees to enhance the Sauvignon Blanc’s varietal expression and reflect the character of its terroir.

Food & Serving
Serve Sobaja Sauvignon chilled at approximately 8–10°C. Its citrus freshness, herbal aromas and mineral profile make it a natural match for seafood, shellfish, grilled fish, fresh salads, asparagus, goat’s cheese and light pasta dishes. Decanting is not necessary; simply open shortly before serving to allow its aromas to develop in the glass.
