Farmed biodynamically for many years, the vineyards are managed with an emphasis on soil vitality and biodiversity, using manual work, horse-ploughing in key parcels and strictly controlled yields. The 2019 blend is Cabernet Sauvignon-led, complemented by Merlot, Cabernet Franc and Petit Verdot, harvested by hand parcel by parcel at optimal ripeness. In the cellar, Pontet Canet follows a minimally interventionist philosophy: gentle extraction, fermentation in temperature-controlled vats, and an élevage that uniquely combines traditional French oak barrels with amphorae—around 35% of the wine is aged in amphora, the remainder in barrels with a judicious proportion of new oak. This mix softens oak imprint, preserving purity of fruit and terroir expression, and contributes to the wine’s distinctive, almost Mediterranean textural charm.
