Drawing on Pommery’s house style, this cuvée highlights precision, freshness, and subtle complexity, making it ideal both as an aperitif and at the table. Its name, “Apanage,” signals a step up in sophistication and aging from the house’s core range, offering a more intricate expression of rosé Champagne.

Tasting Notes
In the glass, Apanage Rosé Brut shows a delicate, luminous salmon-pink hue with fine, persistent bubbles that form a graceful mousse. On the nose, it opens with vibrant red berries—wild strawberry, raspberry and redcurrant—layered with hints of blood orange, rose petals and a touch of brioche and chalk, reflecting its extended lees aging. The palate is dry and poised, with a silky, creamy texture supported by a taut spine of chalky acidity. Flavors of fresh berries and pomegranate meet notes of citrus zest, white peach and subtle pastry, finishing long and clean with a mineral edge. As a non-vintage Champagne with extended time on lees, it is drinking beautifully on release but will hold and gain a little extra harmony and nuance over the next 3–5 years if stored correctly.

Production
Sourced from carefully selected vineyards across the Champagne region in France, Pommery Apanage Rosé Brut is built on a Chardonnay-focused base complemented by Pinot Noir, some of which is vinified as red wine to achieve its elegant color and red-fruited profile. The cool, chalk-rich soils and northerly climate contribute to the wine’s signature tension and minerality. Grapes are harvested by hand, parcel by parcel, to ensure optimal ripeness and gentle handling. After a gentle pressing and primary fermentation in temperature-controlled vats, the different base wines are blended to achieve the Apanage style before undergoing secondary fermentation in bottle. The wine then spends an extended period aging on its lees in Pommery’s historic chalk cellars, enhancing texture and complexity, before disgorgement and a carefully judged Brut dosage.

Food & Serving
This rosé Champagne is a versatile partner at the table, pairing beautifully with dishes such as tuna tartare, salmon sashimi, grilled prawns, crab cakes, charcuterie, roast poultry with herbs, or soft-rind cheeses like brie and camembert. It also complements fruit-based starters and desserts that are not overly sweet, such as fresh berries or a citrus tart. Serve well-chilled at around 8–10°C (46–50°F). While decanting is not necessary, opening the bottle a few minutes before serving and pouring into proper Champagne flutes or white wine glasses will allow its aromas to fully unfold.
