Podere Sapaio Volpolo di Sapaio is a polished Tuscan red from Bolgheri, crafted in one of Italy’s most celebrated coastal appellations. Built on a blend of Cabernet Sauvignon, Merlot, and Petit Verdot, it combines ripe fruit, structure, and a distinctly Mediterranean sense of freshness that has helped make Bolgheri famous for world-class Bordeaux-style wines.

Tasting Notes
The wine shows a deep, inviting color in the glass, hinting at its dark-fruited core and serious structure. Aromas open with blackcurrant, plum, and subtle red berry notes, layered with Mediterranean herbs, spice, and a refined mineral edge that reflects its coastal origins. On the palate, Volpolo is medium to full-bodied, with ripe tannins, generous fruit concentration, and a balanced, elegant finish. The blend brings together Merlot’s softness, Cabernet Sauvignon’s backbone, and Petit Verdot’s color and grip, giving the wine both immediate appeal and the ability to develop nicely over the next several years.

Production
Produced in Bolgheri, on Tuscany’s Tyrrhenian coast, the wine benefits from warm sunshine, cooling sea breezes, and well-drained soils that help preserve freshness while encouraging ripeness. The grapes are carefully harvested and vinified to highlight purity of fruit and a supple, layered texture, with the final blend assembled to balance richness, structure, and finesse.

Food & Serving
This is an excellent match for grilled steak, roast lamb, braised beef, and Tuscan-inspired dishes such as wild boar ragù or mushroom risotto. Serve at around 16–18°C, and consider decanting for 30–60 minutes if opened young to allow the aromas and tannins to fully open.
