Ployez-Jacquemart Champagne Blanc de Blancs Extra Quality Brut is a finely sculpted, Chardonnay-driven Champagne that showcases precision, tension and elegance in equal measure. Crafted exclusively from white grapes, this non-vintage cuvée highlights the purity and finesse of some of Champagne’s best chalk-based sites, offering a refined alternative to richer, broader styles. Extra Quality Brut indicates a low dosage, allowing the wine’s mineral backbone and citrus brightness to shine through with remarkable clarity.

Tasting Notes
In the glass, this Blanc de Blancs shows a pale straw to light gold hue with a fine, persistent mousse and delicate bead, hinting at its extended lees aging. The nose opens with lifted aromas of lemon zest, green apple and white flowers, layered with chalky minerality and subtle brioche and almond from time spent on the lees. On the palate, it is taut, precise and wonderfully refreshing, with a core of citrus fruits, crisp pear and hints of white peach wrapped in a saline, chalk-driven structure. The texture is creamy yet vibrant, with finely knit bubbles and a long, mouthwatering finish that leaves impressions of pastry, crushed stones and a gentle nuttiness. Thanks to its careful vinification and significant lees aging, this non-vintage cuvée has the structure to develop additional complexity over the next 3–6 years, gaining more toast, hazelnut and honeyed notes while retaining its linear, mineral style.

Production
Sourced from select Chardonnay parcels in the Champagne region of France, this Blanc de Blancs draws heavily on chalk-rich terroirs that naturally promote elegance, tension and aromatic purity. Ployez-Jacquemart is known for meticulous vineyard work, with hand-harvested grapes picked at optimal ripeness to preserve acidity and finesse. In the cellar, only the finest first-press juice is used, and fermentation typically takes place in temperature-controlled vessels to safeguard delicacy and freshness. The base wines are blended across several vintages to achieve a consistent house style, then undergo second fermentation in bottle followed by extended lees aging deep in traditional chalk cellars. A modest Brut dosage is added at disgorgement, resulting in a Champagne that is dry, focused and terroir-expressive.

Food & Serving
This Champagne’s bright acidity and refined texture make it a natural partner for seafood and delicately flavored dishes. Serve it alongside oysters, scallop crudo, sushi and sashimi, poached lobster, or simply prepared white fish, as well as light goat cheese, fresh chèvre tartlets or fine charcuterie. It also shines as a sophisticated aperitif. For optimal enjoyment, serve at 8–10°C (46–50°F). A brief 10–15 minutes in the glass is sufficient for the wine to open; decanting is not necessary, though pouring into larger white-wine stems rather than narrow flutes will better showcase its aromatics and complexity.
