Grapes are typically harvested by hand to ensure optimal ripeness and gentle handling, preserving the integrity of each cluster. After careful pressing, the base wines are vinified separately by grape variety in temperature-controlled tanks to retain aromatic purity, then blended to achieve the house style. Secondary fermentation takes place in bottle following the traditional méthode champenoise, with an extended period on the lees to develop fine bubbles, complexity and a creamy texture before disgorgement and dosage.

It shines as an aperitif with canapés, oysters, sushi, or simple salted almonds, and pairs beautifully with seafood dishes, light fish preparations, poultry in cream sauces, and soft cheeses such as brie or triple-cream varieties.
