With air, more nuance emerges—cedar, dark chocolate and a subtle floral lift that’s unmistakably Pauillac yet distinctly elegant.
On the palate, the wine is full-bodied yet remarkably poised, with huge concentration carried by bright, clear acidity and ultra-fine tannins. Production
This 2016 Pichon-Longueville Comtesse de Lalande hails from prime gravelly terroir in Pauillac, on the Left Bank of the Gironde, where deep gravel over clay and sand provides perfect drainage and encourages Cabernet Sauvignon to ripen slowly and fully. The blend in 2016 is dominated by Cabernet Sauvignon, complemented by Merlot and small proportions of Cabernet Franc and Petit Verdot, carefully selected from old vines. Harvesting is carried out parcel by parcel at optimal ripeness, typically by hand, with rigorous sorting to ensure only pristine berries make it into the winery. Fermentation takes place in temperature-controlled vats, followed by élevage in French oak barrels (a significant portion new), where the wine matures on its lees and gains texture, aromatic complexity and the hallmark polish that characterizes Pichon Comtesse.
Food & Serving
This is a classic Pauillac built for the table, shining alongside refined yet flavorful dishes. Think roast lamb with herbs, dry-aged ribeye, venison, beef Wellington, or braised short ribs; it also pairs beautifully with truffle dishes, wild mushrooms, and aged hard cheeses such as Comté or mature Gouda. Serve at 16–18°C (60–64°F) to highlight its aromatic complexity and structural finesse. In its youth, especially from a 3L double magnum, decanting for 2–3 hours is recommended to allow the wine to fully open; as it matures, gentler decanting mainly to remove sediment will be sufficient.
