Pichon Baron 2023 is a classic Pauillac from one of Bordeaux’s most respected estates, offering the depth, structure, and finesse that collectors and Cabernet lovers look for. As a 2ème Grand Cru Classé, it carries the pedigree of one of the Médoc’s great names and the precision of a modern, highly regarded Bordeaux estate.

Tasting Notes
The wine typically shows a deep, dark ruby colour with a concentrated core, hinting at both power and freshness. On the nose, expect a refined bouquet of blackcurrant, blackberry, graphite, cedar, and subtle floral and tobacco notes, with well-integrated oak adding polish and spice. On the palate, Pichon Baron is usually full-bodied and structured, with firm but finely grained tannins, vivid acidity, and layers of cassis, dark plum, crushed stone, and savory earth. The finish tends to be long and disciplined, suggesting excellent aging potential; in a strong vintage like 2023, it should reward cellaring for many years.

Production
Produced in Pauillac on the Left Bank of Bordeaux, Pichon Baron benefits from the gravelly soils that are ideal for Cabernet Sauvignon, bringing drainage, concentration, and a distinct mineral edge. The estate’s vineyards are managed with a focus on precision and parcel selection, with harvesting typically carried out by hand to ensure optimal ripeness and fruit quality. Vinification is designed to preserve purity and structure, with careful fermentation and maturation in French oak to build complexity and age-worthy balance.

Food & Serving
This is a natural match for richly flavored dishes such as ribeye steak, lamb rack, beef Wellington, braised short ribs, or game with mushroom-based sauces. It also pairs beautifully with aged hard cheeses. Serve at around 16–18°C and consider decanting for 1–2 hours, especially in its youth, to allow the aromatics and tannins to open fully.
