Château Pichon Baron is one of Pauillac’s great names, producing a classic left-bank Bordeaux with impressive depth, structure, and elegance. Classified as a 2ème Grand Cru Classé in 1855, the estate has long been admired for wines that balance power with precision.
Tasting Notes
The 2021 vintage is typically marked by a refined, more restrained expression than riper years, with a deep ruby appearance and excellent clarity. Expect layered aromas of blackcurrant, cedar, graphite, plum, and subtle floral or spicy notes, supported by a fresh, mineral edge.
On the palate, it should offer firm but polished tannins, bright acidity, and a focused core of dark fruit, tobacco, and savory oak influence. This is a wine built for aging, and while approachable with proper decanting, it will reward cellaring for many years as the structure integrates and complexity develops.
Production
Pichon Baron is located in the heart of Pauillac on Bordeaux’s Left Bank, where gravelly soils over clay and limestone provide ideal drainage and help Cabernet Sauvignon achieve its signature depth and aromatic lift. The estate is known for careful vineyard management and precise harvesting, with grapes selected for ripeness and balance before vinification in temperature-controlled vats. The wine is then matured in oak barrels to refine tannins and add layers of complexity.
Food & Serving
Best served with hearty dishes such as grilled ribeye, lamb, duck breast, or slow-braised beef, as well as mushroom-based preparations and hard aged cheeses. Serve at around 16–18°C, and decant for one to two hours if drinking young to allow the wine to खुल fully and soften its tannins.
