Tasting Notes
In the glass, the wine typically shows a deep ruby-garnet colour with excellent intensity. The nose leans toward blackcurrant, blackberry, cedar, tobacco, graphite, and subtle spice, with the kind of noble earthiness that develops beautifully with age. On the palate, 2008 is firm and structured, with ripe dark fruit framed by fine-grained tannins and a fresh, linear backbone. Notes of cassis, plum, liquorice, and pencil shavings lead into a long, composed finish. This vintage has strong aging potential and can continue to evolve gracefully for many more years, gaining complexity and softness with time.

Production
Pichon Baron’s vineyards sit on the gravelly soils of Pauillac, where excellent drainage and the maritime climate of Bordeaux help Cabernet Sauvignon ripen with power and definition. The estate is known for meticulous vineyard management and careful selection, ensuring only the best fruit reaches the cellar. Vinification is traditionally focused on preserving purity, structure, and the estate’s signature depth, often followed by élevage in French oak to add polish and complexity.

Food & Serving
This is a natural match for roasted lamb, beef fillet, duck breast, game, and rich mushroom dishes, as well as aged hard cheeses. Serve at around 16–18°C, and decant for 1–2 hours if drinking now to allow the wine to open fully and soften its tannins.
