Philippe Pacalet’s Cornas 2017 is a striking, terroir-driven Northern Rhône Syrah that marries old-school Cornas muscle with Pacalet’s signature finesse and precision. Working without added yeasts, enzymes or heavy new oak, Pacalet lets the granitic slopes of Cornas speak clearly in the glass. This cuvée captures the historic power of the appellation while presenting it in an unusually vibrant, lifted style that has made Pacalet a cult name among Burgundy and Rhône aficionados alike.

Tasting Notes
In the glass, Cornas 2017 shows a deep, saturated ruby-purple core with a vivid rim that hints at both concentration and freshness. The nose is intensely aromatic yet detailed: wild blackberries, ripe blackcurrant and dark cherry are laced with cracked black pepper, violets, smoked meat, tapenade and graphite, along with a subtle herbal edge of thyme and bay. On the palate, the wine is full-bodied and structured, but never heavy. Dark fruit is wrapped around a firm spine of granitic tannins, with lively acidity keeping everything bright and energetic. Flavors of black plum, bramble, peppercorn, smoked bacon and a touch of iron and earth unfold in layers, leading to a long, savory finish. Still youthful, this 2017 has the stuffing to evolve beautifully over the next 10–15 years, gaining more complexity, silkier tannins and deeper secondary notes with time in the cellar.

Production
Cornas is famed for its steep, sun-drenched, granite terraces, and Pacalet’s approach is to translate this rugged terroir into the most pure and expressive form possible. Grapes are harvested by hand from low-yielding Syrah vines rooted in poor, decomposed granite soils that naturally limit vigor and concentrate flavor. In line with his natural, non-interventionist philosophy, Pacalet works with whole-cluster fermentation using only indigenous yeasts, favoring gentle extraction to preserve freshness and nuance rather than sheer power. The wine is then aged in older oak barrels to avoid overt wood influence, bottled without heavy filtration, and crafted to reflect both the character of Cornas and the subtle, refined touch that defines Pacalet’s wines.

Food & Serving
This Cornas 2017 is a superb partner for robust, savory dishes: think roast lamb with rosemary and garlic, slow-braised beef cheeks, duck confit, game birds, grilled venison, or a classic steak with pepper sauce. It also shines alongside roasted root vegetables, wild mushroom dishes, and aged hard cheeses such as Comté or Manchego. Serve at around 16–18°C (60–64°F) for optimal balance and aromatic expression. Decanting for 1–2 hours is recommended in its youth to soften the tannins and allow the smoky, meaty and floral notes to fully emerge; older bottles will need gentler, shorter decanting mainly to separate sediment.
