Tasting Notes
Expect a dark, concentrated ruby core with mature garnet edges developing in the glass. The nose is typically layered and expressive, offering black fruits, garrigue herbs, leather, spice, and subtle earthy nuances, with time bringing even more complexity and lift.
On the palate, Clos des Cistes is known for its dense yet refined texture, combining ripe dark berry fruit with savory Mediterranean notes, mineral tension, and firm but polished tannins. The 2012 vintage should still have considerable aging potential, and careful cellaring may allow it to evolve gracefully for many years.
Production
Peyre Rose is located in the hills of Languedoc, where poor soils, Mediterranean sunshine, and cooling influences help produce wines of concentration and freshness. The estate is renowned for very low yields and meticulous vineyard work, with grapes harvested by hand to preserve quality. Vinification is carried out with a highly traditional, minimal-intervention philosophy, allowing the wine to express both site and vintage with remarkable purity.
Food & Serving
This is a superb match for slow-braised lamb, game, roasted duck, or hearty dishes with herbs and olives, as well as aged hard cheeses. Serve at around 16–18°C, and decant several hours before serving to allow the wine to open fully and show its aromatic complexity.
