Peter Michael Les Pavots is one of California’s standout Bordeaux-style red blends, offering the polish and perfume of a great Left Bank wine with the depth and power that Knights Valley can deliver. Made from Cabernet Sauvignon, Cabernet Franc, Merlot, and Petit Verdot, it is the estate’s flagship wine and a benchmark bottling for Peter Michael Winery.

Tasting Notes
In the glass, it shows a deep, rich color that hints at its concentration and intensity. The nose is layered and seductive, with aromas of dark cherries, blackberries, blueberry coulis, morels, fresh leather, and vanilla. On the palate, it is full-bodied and powerful, yet remarkably refined, with flavors that echo the bouquet and add dark chocolate and sweet tobacco. The structure is impressive, and while it already shows plenty of charm, it should gain even more complexity with a few more years in bottle. With proper cellaring, it has the potential to age beautifully for decades.

Production
Les Pavots comes from Peter Michael Winery’s own vineyard in Knights Valley, a warm yet elevated California terroir that suits Bordeaux varieties exceptionally well. The wine is aged for 18 months in 100% French oak barrels and bottled unfiltered, helping preserve its intensity, texture, and sense of place.

Food & Serving
This is a wine that calls for equally serious food: think roast beef, beef tenderloin, lamb, duck breast, or game dishes with earthy accompaniments such as mushrooms or truffle. Serve it at around 16–18°C, and consider decanting for at least 1–2 hours if opening young to allow the wine to unfold fully.
