Pedrotti Trento Brut is a classic-method sparkling wine born in the dramatic mountain landscape of the Dolomites, where altitude and Alpine breezes shape its refined character. Made from Chardonnay and crafted under the prestigious Trento DOC appellation, it offers a poised, elegant expression of Italian sparkling wine. As one of the region’s traditional spumante styles, it captures both the purity of mountain fruit and the finesse of long lees aging.
Tasting Notes
In the glass, Pedrotti Trento Brut shows a bright straw-yellow hue with fine, persistent bubbles that form a delicate, long-lasting mousse. On the nose, it opens with crisp green apple, pear and citrus zest, layered with notes of white flowers, freshly baked bread and a subtle mineral edge that recalls wet stone and mountain air.
The palate is dry, lively and well-balanced, with refreshing acidity and a silky, creamy texture from its time on the lees. Flavors of lemon, apple and subtle stone fruit are supported by hints of brioche and almond, leading to a clean, savory, mineral-driven finish. Enjoyed now for its vibrancy and precision, it also has the structure to evolve gracefully for a few more years in bottle, gaining complexity and softness with time.
Production
Sourced from hillside vineyards in Trentino Alto Adige, Pedrotti Trento Brut benefits from a cool Alpine climate, significant diurnal temperature shifts and well-drained, mineral-rich soils born from the Dolomites. Grapes are typically harvested by hand to preserve freshness and allow careful selection of bunches at optimal ripeness. After gentle pressing, the base wine undergoes its first fermentation in temperature-controlled stainless steel to retain aromatics, followed by a second fermentation in the bottle according to the Metodo Classico (traditional method). The wine is then aged on its lees in underground cellars, allowing it to develop finesse, complexity and its signature fine perlage before riddling, disgorgement and dosage.
Food & Serving
Pedrotti Trento Brut is a natural match for refined appetizers such as oysters, carpaccio of white fish, sushi and sashimi, as well as delicate vegetable tempura or fresh goat cheese. It also pairs beautifully with light pasta dishes, risotti with seafood, and simple preparations of lake or sea fish. Serve well-chilled at around 6–8°C (43–46°F) to highlight its crispness and aromatic clarity. A short 10–15 minutes in the glass is sufficient to let it open up; decanting is not necessary, though pouring into proper sparkling wine flutes or tulip-shaped glasses will best showcase its mousse and bouquet.
