Tasting Notes
In the glass, Pavillon Rouge 2004 shows a deep ruby garnet hue with subtle signs of maturity at the rim. The nose is classic Margaux in style, opening with blackcurrant, cedar, graphite, and dried flowers, followed by hints of tobacco, leather, and sweet spice as it evolves in the glass.
On the palate, it is polished and finely knit, with ripe Cabernet Sauvignon bringing structure, Merlot adding supple texture, and the supporting varieties lending nuance and lift. The finish is graceful and persistent, with earthy, savory tones balanced by fresh acidity. While already enjoyable now, it still has the balance to age further for several years under proper cellar conditions.
Production
Pavillon Rouge comes from the vineyards of Château Margaux in the Margaux appellation of Bordeaux, where gravel-rich soils and a temperate Atlantic climate provide ideal conditions for Cabernet Sauvignon-led blends. The estate’s careful vineyard management and selective harvesting ensure that only fruit meeting strict quality standards is used. Vinification is carried out with the same precision as at the grand vin level, with meticulous sorting, plot-by-plot selection, and élevage in oak to preserve purity, structure, and finesse.
Food & Serving
This wine pairs beautifully with roast lamb, beef tenderloin, duck breast, mushroom dishes, and truffle-infused preparations. It also works well with aged hard cheeses. Serve at 16–18°C, and consider decanting for 1–2 hours if opening now, especially to allow its aromatic complexity and structure to fully emerge.
