Tasting Notes

Production
Pavie’s vineyards sit on one of Saint-Émilion’s most distinctive terroirs, with a mix of limestone, clay, and rocky soils that help produce wines with both power and tension. The fruit is typically harvested by hand and selected with great care before vinification in temperature-controlled vats, followed by élevage in oak barrels to build depth, texture, and aromatic complexity.

This is a classic wine for slow-roasted lamb, beef tenderloin, duck breast, truffle dishes, or mushroom-based preparations. Serve at around 16–18°C, and decant for at least 1–2 hours if drinking now to allow the wine to open fully and soften its structure.
