Paul Gayot’s Vosne-Romanée “Aux Champs Perdrix” expresses the celebrated elegance of one of Burgundy’s most distinguished appellations. Shaped by clay-limestone soils and a favourable microclimate, it is a refined, silky red with finesse, aromatic depth and the seductive character associated with Vosne-Romanée.
Tasting Notes
In the glass, this red is expected to show a bright ruby colour, developing greater depth with age. The nose is marked by refined red-fruit aromas, delicate spice and the subtle earthy complexity typical of Pinot Noir from Vosne-Romanée. On the palate, it is smooth and beautifully balanced, with polished tannins, supple texture and a long, graceful finish.
Its elegance makes it approachable in its youth, while the quality of the appellation, careful élevage and balanced structure should allow it to develop further complexity over the medium term. Please note that the supplied tasting information refers to the 2022 vintage, while this listing is for 2024; the exact ageing profile may therefore vary.
Production
The vineyard’s clay-limestone soils, position and local microclimate provide the foundation for a wine of finesse and silky texture. Following a cold pre-fermentation maceration of three to five days, the grapes undergo alcoholic fermentation in stainless-steel tanks, with daily pump-overs and gentle punching down. Malolactic fermentation is followed by nine to twelve months of maturation in oak barrels.
Food & Serving
A natural partner for dishes with earthy and savoury depth, this Vosne-Romanée pairs particularly well with truffle-based preparations, roast or grilled beef, and tender lamb. Serve slightly below room temperature, around 16–18°C. Decanting is not essential for a young bottle, but 30–60 minutes in a decanter can help open the wine; older bottles are best handled gently and decanted only if necessary to remove sediment.
