Description
Paul Gayot’s Vosne-Romanée Aux Champs Perdrix 2023 is an elegant red Burgundy from one of the Côte de Nuits’ most celebrated appellations. Defined by the finesse and sensual texture associated with Vosne-Romanée, it combines silky fruit, refined structure and the distinctive character of a clay-limestone terroir.
Tasting Notes
The wine is expected to show a bright ruby-red colour, with an aromatic profile centred on ripe red berries, delicate floral nuances and subtle earthy complexity. On the palate, it is smooth and supple, with polished tannins, balanced acidity and a velvety texture that gives the wine both elegance and persistence.
Its combination of finesse and structure makes it enjoyable in its youth, while careful cellaring should allow additional layers of spice, forest floor and truffle to develop over the coming years. A drinking window of approximately 5–10 years from the vintage should suit the wine well, depending on storage conditions and personal preference.
Production
The vineyard’s clay-limestone soils, favourable location and microclimate provide the foundation for a wine of notable elegance and finesse. Following a 3–5-day cold maceration, fermentation takes place in stainless-steel tanks, with daily pump-overs and gentle punching down of the cap. The wine then undergoes malolactic fermentation and matures for approximately 9–12 months in oak barrels, allowing the fruit and terroir to integrate with subtle oak influence.
Food & Serving
This Vosne-Romanée is a natural partner for refined dishes featuring truffle, as well as roasted or grilled beef and lamb. It also works beautifully with mushroom-based preparations and other savoury dishes that complement its silky texture and earthy depth. Serve at around 15–16°C; decanting is not essential for a young vintage, but 30–45 minutes in a decanter can help open the wine and reveal its aromatic nuances.
