Paul Gayot Meursault Le Porusot 2023 is an expressive white Burgundy from one of Meursault’s highly regarded vineyard sites. Combining richness, precision and fine mineral freshness, it offers the generous texture associated with Meursault while retaining an elegant, focused character.
Tasting Notes
The wine presents a bright, pale-golden colour. Its aroma is marked by fresh butter, citrus fruits and subtle vanilla, with a refined impression of oak and mineral depth. On the palate, it is round, full-bodied and powerful, yet beautifully precise, supported by lively freshness and a distinctive mineral character. The finish is long and persistent, making the wine enjoyable now while giving it the structure to develop further in bottle over the next several years.
Production
Made from Chardonnay in Meursault, Burgundy, the wine reflects the limestone-rich terroir for which the appellation is known. Whole bunches are pneumatically pressed, followed by 24 hours of cold settling for clarification. Alcoholic fermentation takes place in stainless-steel tanks, while malolactic fermentation and 12 months of maturation are carried out in oak barrels, adding texture and gentle vanilla notes while preserving freshness.
Food & Serving
Serve lightly chilled at approximately 11–13°C. Its richness and freshness make it a natural partner for roast chicken, veal in a creamy sauce, grilled or baked lobster, scallops, and dishes featuring mushrooms. Decanting is not essential when young, but 20–30 minutes of gentle aeration can help open the wine and reveal more of its aromatic complexity.
