Paul Gayot’s 2023 Gevrey-Chambertin comes from one of Burgundy’s most celebrated appellations, renowned for producing structured and age-worthy red wines. A classic Côte de Nuits expression, it combines the elegance of Burgundy with the depth and savoury character associated with Gevrey-Chambertin.

Tasting Notes
The specific tasting profile of this vintage has not been provided, but Gevrey-Chambertin traditionally shows a deep ruby colour with aromas of red and dark berries, violets, earthy spice and subtle woodland notes. On the palate, wines from the appellation are typically medium- to full-bodied, with lively acidity, firm but refined tannins and a lingering, savoury finish. With its 9–12 months of barrel ageing, the wine should have the structure to develop additional complexity in bottle, although exact ageing potential will depend on storage conditions and the vintage.

Production
The grapes undergo a three- to five-day cold maceration before fermentation in stainless-steel tanks. Alcoholic fermentation is managed with daily pump-overs and gentle punch-downs to extract colour, flavour and structure. The wine then undergoes malolactic fermentation and is aged for 9–12 months in oak barrels.
