Paul Gayot’s 2023 Chassagne-Montrachet Les Embazées is an elegant and refined white Burgundy, combining aromatic complexity with the poised freshness for which the appellation is renowned. Its attractive balance of ripe white fruit, floral notes, toasted hazelnut and mineral precision makes it a particularly expressive choice for Burgundy enthusiasts.

Tasting Notes
The wine presents a luminous golden colour with subtle green reflections. On the nose, it offers an inviting combination of white fruit and delicate acacia blossom, complemented by a discreet toasted, nutty character. The palate is refined and well balanced, bringing together ripe fruit, floral nuances and roasted hazelnut. A fresh mineral line provides definition, while the long, harmonious finish gives the wine excellent persistence. It is enjoyable now, but should gain additional complexity over the next several years as the fruit, oak and mineral elements integrate further.

Production
The wine is made from whole bunches using pneumatic pressing, followed by 24 hours of cold settling to clarify the juice while preserving its freshness and aromatic detail. Alcoholic fermentation takes place in stainless-steel tanks, while malolactic fermentation is carried out in oak barrels. The wine then matures in barrels for 12 months, adding texture and subtle toasted complexity without overshadowing its mineral character.

Food & Serving
Serve at approximately 10–12°C. Its combination of freshness, texture and discreet oak makes it an excellent partner for grilled or roasted fish, shellfish, scallops, poultry in a creamy sauce, and dishes featuring mushrooms. It can also complement mature cheeses such as Comté. Decanting is not essential, although a brief 15–20 minutes in a decanter may help reveal its floral and nutty aromas when served young.
