Paul Gayot’s Bourgogne Pinot Noir 2023 is a light, well-structured red that offers an approachable expression of Burgundy terroir at an accessible price. Easy to enjoy yet pleasantly detailed, it is a versatile French Pinot Noir suited to relaxed occasions and everyday dining.
Tasting Notes
Bright ruby in colour, this Pinot Noir shows a fresh, inviting nose with delicate red-fruit character and subtle earthy notes. On the palate, it is light-bodied and balanced, with supple tannins, lively freshness and an uncomplicated, easy-drinking finish.
The wine is best enjoyed young, when its freshness and approachable fruit are at their most expressive. It should drink well over the next few years, although it is not intended as a long-term cellaring wine.
Production
The wine is made from Pinot Noir grown in Burgundy and is intended as a straightforward interpretation of the region’s terroir. The grapes are destemmed before a three- to five-day cold maceration. Fermentation takes place in stainless-steel tanks, with daily stirring or pump-overs and gentle punch-downs to encourage balanced extraction. The wine then matures for 12 months in stainless steel, preserving its freshness and clarity of fruit.
Food & Serving
A natural partner for classic French comfort food, this Bourgogne Pinot Noir pairs especially well with terrines, sausages, pâtés and andouillettes. It also works nicely with roast poultry, charcuterie and simple mushroom dishes. Serve lightly chilled at around 14–16°C. Decanting is not necessary, though a brief opening 20–30 minutes before serving can help the wine’s aromas unfold.
