Description
Paul Gayot’s Bourgogne Chardonnay 2024 is a fresh, balanced Burgundy white with generous roundness and elegant mineral character. Made from Chardonnay and matured for 10 months in oak, it combines bright fruit and floral notes with a subtle layer of hazelnut, making it an appealing expression of classic Bourgogne Chardonnay.
Tasting Notes
The wine shows a pale yellow colour with attractive golden highlights. On the nose, it offers inviting aromas of white fruit and acacia blossom, followed by a delicate hint of hazelnut. The palate is fresh and well balanced, with a pleasantly rounded texture and a refined mineral finish.
This Chardonnay is enjoyable in its youth, when its fruit, freshness and floral character are at their most vivid. It should also develop added richness and complexity over the next few years if stored in a cool, dark cellar.
Production
The grapes undergo pneumatic pressing as whole bunches, followed by 24 hours of cold clarification. Alcoholic fermentation takes place in stainless-steel tanks, while malolactic fermentation occurs in oak barrels. The wine is then matured in barrels for 10 months, giving it additional texture and subtle nutty depth while preserving its freshness.
Food & Serving
Serve this Bourgogne Chardonnay lightly chilled at around 10–12°C. It is a natural match for grilled fish, shellfish and roasted or pan-fried poultry, and also pairs beautifully with mild cheeses such as Comté or Chaource. Decanting is not essential, although opening the bottle 15–20 minutes before serving can allow its floral and mineral aromas to open further.
