Tasting Notes
In the glass, Pauillac de Latour 2017 shows a deep ruby to garnet core with youthful brightness at the rim, hinting at its vitality and freshness. The nose opens with layers of blackcurrant and ripe plum, lifted by notes of minty berry, blackberry and a touch of graphite and pencil shavings, underpinned by subtle cedar and a whisper of spice.
On the palate, this is a medium to full-bodied Pauillac with an elegant, finely etched profile. Pure dark fruit—blackcurrant, mulberry and plum—unfolds over a framework of supple, well-integrated tannins. The texture is polished rather than muscular, with a lively, precise line of acidity that keeps everything fresh and buoyant. Production
Pauillac de Latour is sourced primarily from dedicated parcels inland from Château Latour’s legendary Enclos, on the gravelly soils that define the Pauillac appellation and sit near Château Haut-Batailley. These deep gravel and clay-gravel terraces over limestone provide superb drainage and naturally low yields, concentrating flavor while maintaining freshness. Harvesting is carried out parcel by parcel, typically by hand, allowing careful selection of only healthy, optimally ripe bunches. In the cellar, the fruit is sorted meticulously before fermentation in temperature-controlled vats, preserving aromatic purity and structure. The wine then matures in carefully chosen French oak barrels, with a judicious proportion of new wood to add finesse and texture without overwhelming the clarity of the fruit.

This refined Pauillac is a natural partner for classic French and modern European cuisine alike. Pair it with roast lamb with herbs, entrecôte with pommes frites, duck breast, or veal with morel sauce; it also works beautifully with grilled beef, game birds, and aged hard cheeses such as Comté or mature Gouda. Serve at 16–18°C (60–64°F) to highlight its finesse and aromatic detail.
