Paladin Drago Rosso Merlot 2023 is a full-bodied yet polished red wine made exclusively from Merlot grapes in Veneto, northeastern Italy. Its combination of ripe fruit, velvety texture and refined tannins reflects Paladin’s sustainable approach and careful maturation in large wooden casks. A distinctive Italian varietal wine, it offers generous drinking now while having the potential to develop in bottle for up to ten years.

Tasting Notes
The wine shows a deep ruby-red colour. Its inviting nose combines ripe cherry, blueberry and plum with delicate sweet-spice nuances developed through maturation in large wooden casks. On the palate, it is full and balanced, with a supple, velvety texture, refined tannins and a persistent, fruit-driven finish. Enjoyable in its youth for its generous freshness and fruit character, it can also gain added complexity with careful cellaring for up to a decade.

Production
The grapes are sourced from vineyards around Annone Veneto in the Veneto region, where Paladin follows a strongly sustainable approach to vineyard management. Fermentation and maceration take place in stainless-steel tanks at controlled temperatures, with maceration lasting more than 18 days to extract colour, flavour and structure. The wine is then matured in large wooden casks, allowing the tannins to soften while preserving the Merlot’s ripe fruit profile. It is produced according to a vegan-friendly philosophy.

Food & Serving
This structured Merlot is a natural match for grilled red meat, roasted beef, burgers and hearty pasta dishes, while its smooth texture also complements mature cheeses. Serve lightly cool at around 16–18°C. It can be enjoyed without decanting, although a short decant of 30–60 minutes may help open its aromas and further soften the tannins, particularly when served young.
