Paco & Lola, No. 12 Albariño 2025 White

Paco & Lola No. 12 Albariño 2025 is a fresh, characterful white wine from Val do Salnés, the coastal heartland of Spain’s DO Rías Baixas. Made from Galicia’s signature Albariño grape, it combines lively Atlantic freshness with the expressive fruit and elegant mineral character for which the region is renowned. The wine comes from Paco & Lola, one of the largest and most modern cooperatives in Rías Baixas.

Tasting Notes
In the glass, the wine is expected to show a bright, pale colour with youthful greenish highlights. Its aromatic profile is fresh and inviting, with notes of citrus, white peach, pear and delicate floral tones, complemented by the clean, saline lift associated with vineyards close to the Atlantic. On the palate, No. 12 Albariño is crisp and refreshing, offering vibrant acidity, ripe orchard fruit and citrus flavours, followed by a subtle mineral finish. It is designed to be enjoyed in its youth, when its freshness and aromatic energy are at their most pronounced, although careful short-term cellaring may allow additional texture and complexity to develop.

Production
The grapes are sourced from more than 200 hectares of Albariño vineyards spread across over 1,800 small parcels in Val do Salnés, the largest subzone of DO Rías Baixas. The area’s cool, maritime climate and Atlantic influence help preserve natural acidity while encouraging bright, aromatic fruit. Paco & Lola combines generations of local vineyard knowledge with modern winery technology and advanced production methods to express the purity and freshness of the Albariño grape.

Food & Serving
Serve well chilled at approximately 8–10°C. Its lively acidity and subtle saline character make it an excellent match for oysters, mussels, prawns, grilled fish, ceviche and other seafood dishes. It also pairs beautifully with sushi, fresh salads, goat cheese and light poultry dishes. Decanting is not necessary; simply open shortly before serving or pour into a white-wine glass to allow the aromas to unfold.

Producer
Founded in 2005, Paco & Lola grew from an initiative by independent winegrowers from O Salnés who wanted to bring their production to a more professional level. They established the Sociedad Cooperativa Vitivinícola Arousana, which today has more than 400 members and is the largest cooperative in DO Rías Baixas. With its extensive vineyard holdings, thousands of small parcels and state-of-the-art facilities, Paco & Lola has become a significant producer in the region, combining local tradition with a contemporary approach to winemaking.
