Tasting Notes
In the glass, the 2018 Spiegel presents a bright, pale to medium straw color with greenish highlights, hinting at freshness despite its concentration. The nose is finely layered, offering notes of ripe yellow apple, pear, white peach and quince, woven with white pepper, fennel seed, crushed herbs and a distinct loess-derived earthiness. Hints of citrus zest, wet stone and a subtle smokiness add complexity as it opens.
On the palate, this is a structured, medium to full-bodied Grüner with a firm, linear backbone. Juicy stone and orchard fruits are lifted by vibrant acidity, while the signature Grüner peppery spice, savory herbal tones and a gentle saline minerality drive through the mid-palate. The texture is both silky and taut, with a long, precise finish featuring citrus peel, fennel, and a chalky grip. 2018 offers early approachability, but the concentration and acidity suggest a strong aging potential of 8–12 years from vintage, during which it will gain more nuttiness, honeyed nuances and complexity.
Production
Ried Spiegel is one of Wagram’s most esteemed south- to southeast-facing sites, perched on deep, fine loess soils above Feuersbrunn. These wind-blown loess deposits retain moisture while allowing good drainage, giving Grüner Veltliner both ripeness and tension, and contributing to the vineyard’s hallmark spice and structure. Ott farms his vineyards organically and biodynamically, typically harvesting by hand to ensure meticulous bunch selection and optimal ripeness. In the cellar, the grapes are gently pressed and the must is allowed a slow, temperature-controlled fermentation, often with indigenous yeasts, in stainless steel and/or large neutral casks. Extended aging on the fine lees enhances texture, complexity and stability, resulting in a wine that clearly reflects both site and vintage rather than heavy-handed winemaking.
Food & Serving
This Grüner Veltliner is exceptionally versatile at the table, excelling with classic Austrian dishes such as schnitzel, roast pork, and veal, as well as modern cuisine. It pairs beautifully with freshwater fish, grilled sea bass, scallops, roasted poultry, and dishes featuring asparagus, artichokes or green vegetables that can challenge many other wines. Asian-inspired dishes with ginger, lemongrass or mild chili heat, as well as sushi and sashimi, also find a natural partner here. Serve at 10–12°C (50–54°F) in a white wine or small Burgundy glass; a brief 20–30 minute decant for young bottles can help open the aromatics and highlight the wine’s layered minerality.
