Tasting Notes
In the glass, it shows a bright pale straw color with lively, persistent bubbles. The nose is fresh and inviting, with notes of green apple, lemon zest, white flowers, and a subtle mineral edge. On the palate, it is taut and lively, with excellent freshness, fine mousse, and a clean, dry finish that makes it especially food-friendly. The Extra Brut style keeps the profile focused and refined, while Erbaluce lends a distinct citrusy, almost saline energy. It is enjoyable now for its vibrancy, but can also develop added complexity over the next few years.

Food & Serving
A perfect match for oysters, shellfish, fried seafood, sushi, light risotto, and delicate antipasti. Serve well chilled, ideally around 6–8°C, and decanting is not necessary.
