Tasting Notes
In the glass, Notte A San Martino 2014 shows a deep, concentrated ruby colour with garnet reflections at the rim, hinting at its bottle age and seriousness. The nose is generous and layered, with ripe black cherry, plum and blackberry compote interwoven with notes of dried herbs, cocoa, sweet baking spices and a touch of tobacco and cedar.
On the palate, the wine is full-bodied yet refined, with velvety tannins and a well-knit structure. Dark berry fruit, blackcurrant and ripe plum lead the way, backed by nuances of chocolate, roasted coffee bean, liquorice and a subtle savoury edge. Olivini place great emphasis on meticulous vineyard work: the vines receive close attention throughout the growing season, yields are controlled, and harvesting is done by hand to ensure only perfectly ripe, healthy bunches are selected. In the cellar, the estate combines modern equipment with a quality-driven mindset, gently destemming and fermenting the Merlot at controlled temperatures to preserve aroma and fruit purity, followed by careful maturation—often in a mix of stainless steel and oak—to refine tannins, add subtle spice and build depth without overwhelming the natural character of the grape and terroir.
Food & Serving
This structured yet supple Merlot is a natural match for rich, flavourful dishes such as slow-braised beef, ossobuco, lamb shanks, roasted game birds, mushroom risotto or aged hard cheeses. It also pairs beautifully with hearty pasta dishes featuring ragù, wild mushrooms or truffle. Serve at 16–18°C to highlight both the fruit and the savoury, spicy nuances.
