Ökologischer Land- & Weinbau KRAEMER’s Silvaner Steillage Silex Bio 2019 is a characterful, low‑intervention white from the steep slopes of Franken, crafted for drinkers who enjoy expressive, unpolished wines. Bottled unfiltered with minimal sulphur, it captures Silvaner in an honest, textural and terroir‑driven style that stands apart from more polished, conventional examples. The name “Silex” refers to the flint (Feuerstein) that dominates the Röttinger Feuerstein soils, a historic steep site whose mineral signature is written clearly into the wine.

Tasting Notes
In the glass, this Silvaner shows a milky‑hazy, pale straw yellow hue – a visual cue to its unfiltered, natural character. The nose opens with yellow stone fruit—think mirabelle plum and ripe pear—wrapped in delicate yeasty tones, citrus zest, and a cool, stony minerality that hints at wet flint and crushed rocks. Subtle herbal and hay notes add complexity as the wine opens up in the glass. On the palate, it is dry, textural and firmly structured, with a pronounced phenolic grip that frames the fruit rather than overpowering it. Juicy stone fruit and orchard apple are lifted by lively, linear acidity, while the flinty, smoky undertone from the Feuerstein soils runs from start to finish. The unfiltered style brings a gentle creaminess and savory, leesy depth, making the wine feel both vibrant and substantial. Enjoy it now for its tension and energy, or cellar it for another 4–6 years to allow the structure and phenolics to meld further and the mineral and tertiary notes to gain in complexity.

Production
The Silvaner grapes come from Stephan Krämer’s steep, manually worked parcels in the historic Röttinger Feuerstein site in Franken, where poor, flinty (silex) soils and good drainage naturally restrain yields and concentrate flavor. Farmed organically and with a clear focus on biodiversity, the vines are tended without synthetic chemicals, and harvesting is done by hand to ensure only healthy, perfectly ripe bunches reach the cellar. The majority of the grapes are pressed directly and undergo spontaneous fermentation with native yeasts in large traditional wooden casks, preserving both regional character and textural nuance. A smaller portion is left as whole clusters and fermented intrancellularly (Macération carbonique), bringing aromatic lift and a supple, rounded fruit profile; this lot is later blended back into the main cuvée. The wine is bottled without fining or filtration and with only a modest dose of sulphur, resulting in its natural haze, pronounced phenolics and authentic expression of site.

Food & Serving
This Silvaner is a versatile partner at the table, particularly with thoughtful, ingredient‑driven cooking. It works beautifully with freshwater fish (trout, zander, pike‑perch), roasted or grilled white meats, herb‑roasted chicken, and classic Franconian dishes such as Schäufele or bratwurst with sauerkraut. Its phenolic structure and savoury, leesy edge also make it an excellent match for asparagus, artichokes, root‑vegetable dishes, wild mushrooms, and mature mountain cheeses. Serve at 10–12 °C to balance freshness with aromatic expression. A gentle, short decant—or simply opening the bottle 20–30 minutes before serving—helps the initial yeasty and reductive notes blow off and allows the stone fruit and flinty minerality to come to the fore; if you prefer a clearer wine, let the bottle stand upright beforehand and pour carefully, leaving the last cloudy centimetre in the bottle.
