Ökologischer Land- & Weinbau KRAEMER’s Silvaner Alte Reben Bio 2020 is a striking, low‑intervention white from the quiet Taubertal in Franken, Germany. Crafted from old-vine Silvaner rooted in shell limestone shot through with graphite veins, it puts texture, spice and mineral depth ahead of simple fruitiness. This is certified organic, naturally made Silvaner for drinkers who enjoy authenticity, nuance and a slightly wild edge in their glass.
Tasting Notes
In the glass, expect a pale to medium yellow hue, often with a slight natural haze that reflects its unfiltered character. The nose leans toward subtle ripe yellow fruit—think quince, yellow apple and mirabelle—layered with herbal and floral hints, plus a cool, stony minerality and a touch of earthy, almost graphite-like spice.
On the palate, the 2020 shows more structure than opulence: a firm, phenolic backbone, moderate alcohol and lively, mouthwatering acidity. The fruit remains restrained and precise, giving space to savory, mineral and slightly spicy notes that become more pronounced with air. It’s a tactile wine, with grip and tension rather than creamy richness, and it can appear a bit angular at first before opening up beautifully over time. Production
The Silvaner Alte Reben Bio 2020 is sourced from old vines in the Taubertal, planted on classic Franken Muschelkalk (shell limestone) soils streaked with graphite veins—an origin that clearly shapes the wine’s mineral, earthy profile. Krämer works his vineyards organically, focusing on biodiversity and low yields to capture concentration without heaviness. Harvesting is done by hand with strict selection of healthy, ripe grapes. In the cellar, spontaneous fermentation with native yeasts is the rule, with some lots seeing extended skin contact and others undergoing partial intracellular fermentation, all without temperature control or oenological additives. The wine receives only a minimal sulfur addition (around 15–20 mg/l) shortly before bottling and is neither fined nor filtered, preserving its natural character and occasional slight cloudiness.
Food & Serving
This is a versatile, gastronomic Silvaner that shines with nuanced, savory dishes. Try it with roasted poultry, veal schnitzel, pork loin with herbs, or freshwater fish such as trout or pike-perch. It also pairs beautifully with seasonal vegetables—white asparagus, fennel, celeriac, kohlrabi or roasted root vegetables—and with mild to medium-intense cheeses, especially semi-hard alpine styles. Serve at 10–12°C to emphasize its freshness and minerality; slightly warmer temperatures will bring out more texture and spice. A brief decant of 20–30 minutes, or simply giving it time to breathe in the glass, helps the wine unfurl from its initially taut, phenolic frame.
