Tasting Notes
In the glass, the 2021 Le Petit Mouton shows a deep, vibrant ruby colour with a youthful purple rim, signalling its energy and concentration. The nose is generous and layered, opening with dark berries, ripe cherries and blackcurrant, followed by notes of licorice, fresh mint and dark chocolate, with a discreet graphite and cedar undertone that is very Pauillac.
On the palate, the wine is medium to full-bodied, rich and beautifully textured, with a dense, velvety mouthfeel. The dark fruit core is pure and focused—think blackcurrant, blackberry and black cherry—interwoven with hints of cocoa, spice and a cool, herbal lift from the mint. The tannins are sweet, fine-grained and well-integrated, giving structure without harshness, and the finish is long, full and satisfying. While it offers plenty of pleasure in its youth after a short aeration, this 2021 has the balance and backbone to evolve gracefully for 10–15 years, gaining further complexity with time in bottle.
Production
Le Petit Mouton 2021 is crafted from the same estate vineyards that produce Château Mouton Rothschild, predominantly Cabernet Sauvignon supported by Merlot and other classic Bordeaux varieties, grown on the deep gravel soils that define Pauillac’s greatest terroirs. In this vintage, the Grand Vin was sourced exclusively from the two historic plateaus at the heart of the estate, allowing Petit Mouton to benefit from parcels that more often reach the top cuvée, raising both its intensity and refinement. Grapes are harvested by hand in small, selective passes through the vineyard to ensure optimal ripeness and health, then carefully sorted before vinification. Fermentation traditionally takes place in temperature-controlled vats, followed by élevage in French oak barrels—many of them previously used for the Grand Vin—allowing the wine to gain texture, aromatic complexity and polished tannins while retaining freshness and clarity of fruit.
Food & Serving
This refined Pauillac pairs beautifully with classic dishes such as roast lamb with rosemary, dry-aged ribeye or entrecôte, duck breast, and game birds, as well as richer dishes like beef Wellington or mushroom and truffle risotto. It also works well with aged hard cheeses such as Comté, Manchego or well-matured Cheddar. Serve at 16–18°C (60–64°F) to highlight its aromatic detail and silky texture. Decanting for about 1–2 hours in its youth will help open the bouquet and soften the tannins, while mature bottles may only need a gentle splash decant to separate them from any sediment.
