Tasting Notes
In the glass, the 2021 Mouton Rothschild shows a deep, vivid ruby-purple hue, signalling both concentration and freshness. The nose is immediately seductive, with dark berry fruit—blackcurrant, blackberry and black cherry—wrapped in cool minty cassis, espresso roast and dark chocolate. Subtle notes of smoked meat, graphite, cedar and finely toasted new oak add complexity and a sense of gravitas.
On the palate, it is full-bodied yet impeccably composed, with a rich, layered core of dark fruit framed by plenty of sweet, powdery, well-structured tannins. Production
Sourced from Mouton Rothschild’s historic Pauillac vineyards on Bordeaux’s Left Bank, the 2021 is rooted in deep gravel soils over limestone and clay—classic Cabernet country that delivers intensity, structure and aromatic lift. The vines, many of them old, are meticulously tended and harvested by hand, with strict selection in the vineyard and at the winery to ensure only pristine fruit makes it into the grand vin. Fermentation typically takes place in a combination of oak vats and temperature-controlled tanks, allowing for precise extraction of color, aroma and tannin, followed by élevage in a high proportion of new French oak barrels. This traditional yet highly controlled approach underscores the wine’s seamless integration of fruit, oak and tannin, and underpins its longevity.
Food & Serving
This is a wine that shines alongside refined, flavourful dishes: think roast lamb with rosemary, dry-aged ribeye, venison, duck breast, or rich dishes featuring wild mushrooms and truffles. It also pairs beautifully with aged hard cheeses such as Comté, Parmesan or mature cheddar. Serve at 16–18°C (60–64°F) in large Bordeaux glasses to allow the aromatics to fully open. Decanting is highly recommended—about 2–3 hours for young bottles—to soften the tannins, release the dark fruit and savoury notes, and reveal the wine’s full complexity.
