The nose is expressive and complex, with notes of white flowers, citrus peel, ripe orchard fruit, toasted bread, and subtle hints of hazelnut and mineral spice. On the palate it is crisp yet rounded, balancing fresh acidity with a creamy texture and impressive structure. The finish is long and elegant, with lingering citrus, brioche, and chalky mineral notes. Thanks to its balance and complexity, it has strong aging potential and can evolve beautifully over several more years.

Produced in Franciacorta in Lombardy, where morainic soils and a cool Alpine-influenced climate help preserve freshness and aromatic detail, Cabochon is crafted from carefully selected Chardonnay and Pinot Noir grapes. The fruit is typically harvested by hand to preserve quality, then vinified using traditional sparkling wine methods with extended lees aging to build texture, finesse, and complexity.

Food & Serving
This wine pairs beautifully with oysters, shellfish, sushi, tempura, risotto with seafood, or delicate poultry dishes. Serve well chilled at around 8–10°C. Decanting is not necessary, though allowing the wine a few minutes in the glass can help it fully open.
