Monte Chiaro Primum Vinum Magnum 2019 ØKO is a certified organic Supertuscan and the flagship wine of Montechiaro, crafted to showcase the full, noble potential of Sangiovese from the hills around Siena. Produced only from hand-selected grapes grown on older vines, it delivers both power and elegance in a generous magnum format that’s perfect for the table or the cellar. This cuvée is sourced from the estate’s three finest single vineyards, each chosen for its exceptional terroir and long-standing role in classic Tuscan viticulture.

Tasting Notes
In the glass, Primum Vinum 2019 presents a deep, intense ruby-red color with garnet reflections hinting at its concentration and careful aging. The nose is rich and layered, offering an immediate burst of ripe blackberries and raspberries, followed by notes of freshly ground coffee, tobacco leaf, and dark chocolate. As it opens, subtle spice and a touch of dried herbs underline its Tuscan origin. On the palate, this is a full-blooded Tuscan red with impressive depth and texture. The wine is generously structured yet remarkably smooth, with ripe, velvety tannins that frame a core of dark, mature berries and subtle cacao tones. The 24 months in lightly toasted oak have added polish and complexity without overshadowing the fruit, leading to a long, persistent finish marked by both richness and finesse. In magnum, and with its solid structure, this 2019 has excellent aging potential, easily developing further complexity over the next 8–12 years or more under proper cellaring conditions.

Production
The Sangiovese for Primum Vinum comes from three single vineyards surrounding the Montechiaro estate near Siena, a corner of Tuscany known for its sun-drenched slopes, well-drained soils, and marked day-night temperature shifts that favor slow, even ripening. Only the best plots are used, with vines at least 15 years old and farmed organically to ensure both purity and intensity of expression. Harvest is carried out entirely by hand, with meticulous sorting of the bunches in the vineyard and at the winery. After picking, the grapes are partially dried for 25 days before pressing, concentrating flavor, aroma, and structure while adding a round, complex character to the finished wine. Fermentation is followed by a long maturation of 24 months in 500-liter lightly toasted oak barrels, after which the wine is further refined in bottle for at least 6 months before release.

Food & Serving
Primum Vinum 2019 ØKO is an ideal match for rich, savory dishes where its depth and structure can truly shine. It pairs beautifully with game dishes such as venison or wild boar, classic grilled or roasted beef, lamb chops or lamb shank, and refined preparations of beef tartare. Mature, hard cheeses—particularly aged pecorino, Parmigiano Reggiano, or well-aged cow’s milk cheeses—also make excellent companions. Serve at 18–20°C; for best expression, especially in magnum, decant 1–2 hours before serving to allow the wine to fully open and reveal its layered aromatics and polished tannins.
