Milan Nestarec Dopamin NV is an energetic, skin-contact white that captures the pulse of Moravian natural wine in a single glass. Built from a blend of Grüner Veltliner, Chardonnay, and Riesling, it’s a vivid, textural orange wine that’s both playful and deeply thought-through. Crafted as a kind of micro‑Solera from four consecutive vintages, it offers complexity and consistency without losing its raw, joyful edge.

Tasting Notes
In the glass, Dopamin shows a hazy, deep straw to light amber hue, with a gentle cloudiness that signals its unfiltered, low‑intervention origins. The nose is expressive and alive: think citrus peel, yellow plum, ripe apricot and quince, layered with chamomile, dried meadow flowers, and a touch of fresh ginger. Subtle herbal notes and a faint hint of honey and wet stone add intrigue as it opens up. On the palate, this is all about texture and tension. Fine, tea‑like tannins from the skin contact frame juicy acidity, giving a firm yet refreshing structure. Flavors of grapefruit zest, preserved lemon, orchard fruits and crunchy pear mingle with savory notes of almond skin, white tea and a saline, mineral edge from the loess soils. The finish is long, slightly pithy and mouthwatering, encouraging another sip. While absolutely ready to drink now for its vibrancy and grip, it has the stuffing to evolve over the next 3–6 years, gaining more nuttiness and honeyed depth with time in bottle.

Production
The grapes for Dopamin come from Slovenské, a loess-rich site in the Velkopavlovická subregion of Moravia, whose deep, fine soils give both ripeness and a subtle, earthy minerality. Farmed organically, the vineyards are harvested entirely by hand to ensure only healthy berries make it to the cellar. The grapes are foot‑trodden and left to macerate on the skins overnight before an extremely gentle 22‑hour pressing. Fermentation is spontaneous with indigenous yeasts, and from 2019 through 2022 the separate lots were blended into a single 3,000‑liter Stockinger oak cask, forming a kind of rolling, four‑vintage Solera. The wine then rested undisturbed until bottling in November 2023, without fining, filtration or added sulfur—natural wine in the strictest sense.

Food & Serving
Dopamin’s structure and savory edge make it an excellent match for boldly flavored, textural dishes. Try it with Middle Eastern mezze, grilled vegetables, cured meats, or roasted poultry with herbs, as well as richer seafood like octopus or monkfish. It also shines alongside spicy Asian cuisine, fermented dishes, and aromatic, washed‑rind or semi‑hard cheeses. Serve slightly chilled at around 12–14 °C; a light decant of 20–30 minutes helps the aromatics unfurl and lets any initial reduction blow off. Don’t be afraid of a bit of sediment—this is a living wine, and a gentle swirl in the glass is all it needs.
