Tasting Notes
In the glass, Opale 2024 typically shows a pale straw-yellow color with greenish reflections, brilliant and limpid, suggesting freshness and youth. On the nose, it is expressive and Mediterranean: notes of citrus zest (lemon, grapefruit), white peach and green apple mingle with hints of wild herbs, white flowers, and a subtle sea-breeze salinity.
The palate is dry, lively and medium-bodied, with a crisp acidity that keeps the wine taut and refreshing. Flavors of juicy stone fruit, ripe citrus and a touch of tropical fruit are layered over a distinct mineral backbone, leading to a clean, slightly saline finish that invites another sip. Enjoyed young for its vibrancy, Opale is best within 2–3 years of the vintage, though a short time in bottle can add a little extra complexity to its aromatics.
Production
Cantina Mesa sources the Vermentino for Opale from vineyards in the Sulcis area of southern Sardinia, where vines overlook the sea and grow in a mix of sandy, calcareous and rocky soils. This coastal terroir, combined with abundant sunlight and cooling marine breezes, enhances both ripeness and aromatic finesse while preserving acidity. Grapes are typically harvested in the cool hours to maintain freshness, then gently pressed. Fermentation takes place in temperature-controlled stainless-steel tanks to capture Vermentino’s pure, primary fruit and floral notes. The wine is aged briefly on its fine lees in tank, adding a touch of texture and complexity while preserving an overall crisp, clean style.

Opale 2024 is a natural partner for seafood: think freshly shucked oysters, grilled prawns, octopus salad, or simply prepared white fish with lemon and herbs. It also pairs beautifully with sushi, light pasta dishes with clams or mussels, goat cheese, and Mediterranean vegetable dishes such as courgette fritters or tomato and basil salads. Serve well-chilled at around 8–10°C (46–50°F). Decanting is not necessary; simply open the bottle shortly before serving to enjoy its bright, aromatic profile at its best.
