Matthieu Godme Guillaume Champagne 1er Cru V.V.V. Extra Brut is a refined grower Champagne that showcases the finesse of Premier Cru terroir in the heart of the Champagne region. Crafted from Chardonnay and Pinot Noir, it is bottled with a very low dosage, giving a pure, precise and mineral-driven expression of the vineyards. The “V.V.V.” designation refers to old vines, whose deep roots and naturally low yields translate into extra intensity and complexity in the glass.

Tasting Notes
In the glass, this Champagne presents a luminous pale gold color, with a fine, persistent mousse and delicate, lace-like bubbles. The nose opens with notes of crisp green apple, lemon zest and white flowers, layered with aromas of brioche, toasted almonds, chalky minerality and a subtle hint of red berries from the Pinot Noir. On the palate, it is taut, dry and focused, with a linear, mouthwatering acidity that balances the wine’s concentration. Flavors of citrus, pear and stone fruit are framed by nuances of hazelnut, pastry cream and a saline, chalk-inflected finish that lingers with impressive precision. The Extra Brut style keeps everything razor-sharp and gastronomic rather than overtly fruity. Enjoyable now for its tension and freshness, it also has the structure and depth to evolve beautifully over the next 5–7 years, gaining more brioche, honeyed and nutty complexity with time.

Production
Sourced from old vines in carefully selected Premier Cru parcels in the Champagne region, this cuvée reflects classic chalk and limestone soils that are prized for giving Champagne its signature tension and minerality. The Chardonnay brings finesse and verticality, while the Pinot Noir contributes body and subtle red-fruit complexity. Grapes are hand-harvested at optimal ripeness to preserve acidity and are gently pressed, with strict selection of the cuvée. Fermentation takes place in temperature-controlled vessels, and a portion may be aged in neutral oak or on fine lees to add texture and complexity. The wine then undergoes secondary fermentation in bottle and spends extended time on its lees before disgorgement, allowing the mousse to refine and flavors to knit together. A very low dosage at disgorgement ensures that the character of the old vines and the Premier Cru terroir remains front and center.

Food & Serving
This Extra Brut Champagne is a superb partner for refined, seafood-driven cuisine: think oysters, scallop crudo, lobster, king crab and sashimi, as well as caviar or delicate fish tartares. It also pairs beautifully with goat cheese, lightly aged hard cheeses, sushi, tempura and elegant poultry dishes with cream or truffle accents. Serve well-chilled, ideally between 8–10°C (46–50°F), to highlight its freshness and precision. A brief 10–15 minutes in the glass or a short, gentle decant in a wide-based carafe can help the wine open up its aromatic layers, especially if served closer to cellar temperature.
