Pale straw in colour with a fine, persistent mousse, it opens with crisp aromas of green apple, citrus peel, white flowers, and subtle brioche. On the palate it is dry and focused, showing bright acidity, creamy texture, and layered notes of lemon, pear, toasted almond, and delicate mineral nuance. The Extra Brut style keeps the wine taut and energetic, while the Chardonnay brings finesse and Pinot Noir adds structure and quiet savoury complexity. It should drink beautifully now for its freshness and precision, but can also gain further nuance over the next few years.

Production
Sourced from the elevated vineyards of Alta Langa in Piedmont, where cool temperatures and significant day-night shifts help preserve acidity and aromatic purity, Severina is crafted for freshness and balance. The grapes are typically harvested by hand, then gently pressed and vinified using the traditional method, with secondary fermentation in bottle and extended lees ageing to build texture and complexity.

Food & Serving
This is an excellent match for oysters, tempura, sushi, shellfish, or delicate white meats, as well as richer dishes like risotto with seafood or aged hard cheeses. Serve well chilled, ideally around 6–8°C, and decanting is not necessary.
